Two Dublin Chefs Crowned Aramark Ireland Healthcare Team of the Year 2025

Aramark Ireland announced the winners following a recent competition held at the Abbey Training Centre in Mayo.

Aramark Ireland is proud to announce that Anna Damasiewicz, from Balbriggan and Chef Manager at Brabazon House Nursing Home in Sandymount, and Brunno Nascimento, from Clonsilla and Chef Manager at the Multiple Sclerosis National Care Centre in Rathgar, have been named the Aramark Ireland Healthcare Team of the Year 2025 following a recent competition held at the Abbey Training Centre in Mayo.

A Culinary Challenge Focused on Resident Wellbeing

Teams from across Ireland took part in the challenge, which tested both culinary skill and the ability to design meals that support residents’ wellbeing.

Each team prepared a signature dish based on a chosen theme and delivered a short presentation explaining how the idea was developed, including resident feedback and nutritional planning. This year, managers also presented directly to the judging panel for the first time.

Brunno impressed judges with his pan-fried salmon with wilted gem, sweet onion, grilled asparagus, pommes purée and a Sauvignon beurre blanc. Anna’s presentation highlighted how the Brabazon House team works to create a “home away from home”, focusing on choice, presentation and daily engagement with residents.

Judges Praise Passion, Skill and Resident-Centred Approach

Speaking after the announcement, Anna said:

“It means a lot for our team in Brabazon to be recognised in this way. We put so much heart into creating meals that feel comforting and familiar for residents. Being acknowledged for that work is very special, and I’m grateful to everyone on our team and the wider Aramark community for their support.”

Brunno added: “It was a tough competition, so winning is a proud moment. Congratulations to all the teams involved. They produced incredible dishes. Thank you to the Aramark Healthcare team for organising such a great event.”

The judging panel included Derek Reilly, Culinary Director, Aramark; Kevin McGinley, Managing Director of Food Solutions; Pauric Coughlan, General Manager of Aramark Hospitality; and Brian Howard of Coolhull Farm.

Derek Reilly said the competition demonstrated the dedication of Aramark’s healthcare chefs: “Their creativity, professionalism and care for residents came through in every dish. I’m very proud of all the finalists and grateful to Abbey Training and our judges for their support.”
