It’s Coeliac Awareness Month and Dublin’s Glas Restaurant is leading the way with gluten free dining

And here’s why it’s important. Head Chef Malte Half says:

Established in Dublin in 2019, Glas is an award-winning vegetarian and vegan fine dining restaurant. With a focus on sustainability, seasonal produce, and gluten-free innovation.

Glas Restaurant became Ireland’s first fully gluten-free fine dining restaurant in 2024. It’s a haven for coeliac and gluten-intolerant diners. With no wheat, barley, or rye handled in the kitchen, every dish on the menu is now completely free of gluten, marking a significant development in the Irish dining scene.

Malte is a master of his craft, with a passion for experimenting with different flavours and textures. Malte has been plant-based for seven years, though he’s been a chef for two decades. He started cheffing at 18 in Berlin and says he’s really grown into it. He’s getting better and better at it and 23 years on he still loves it. Previous to his time at Glas, he worked exclusively at hotel restaurants, including Anantara The Marker Hotel.
