The five-star InterContinental Dublin puts the delicious home-grown Irish asparagus in the spotlight on a special seasonal menu this May
InterContinental Dublin’s Executive Chef Alberto Rossi is making the most of asparagus season in Ireland (which runs for quite a short time, from just May until June) by carefully sourcing mouth-watering green asparagus from Drummond House in Baltray, Co. Louth, as well as white and purple asparagus from the Wye Valley near Herefordshire in England, to create a fresh and bespoke asparagus menu for the hotel.
Guests can choose from small dishes including delicate Asparagus and Egg (Warm White, Green and Purple Asparagus, Hollandaise, 63C Egg, Grana Padano toile); Asparagus, Burrata and Truffle (Salad of Asparagus, Burrata, Truffle dressing); or White Asparagus Pinacate Lobster Salad to start.
For mains – Atlantic Halibut and Asparagus (Pan Fried Halibut, Green, White and Purple Asparagus, Peas, Broad Beans, Romanesco Broccoli); Asparagus and Lobster (Grilled ½ Lobster, Braised White and Purple Asparagus, Tarragon Hollandaise Sauce); Asparagus Risotto (Carniola Risotto, White, Green and Purple Asparagus.
The special seasonal asparagus menu will be available from 4th May until 1st of June in Seasons Restaurant and the Lobby Lounge at InterContinental Dublin, with dishes starting from €15.
