
Aramark Ireland successfully delivered one of the largest hospitality operations in Irish sport.
More than 70,000 visitors experienced a taste of Ireland’s finest food and hospitality during this year’s Irish Open, as Aramark Ireland successfully delivered one of the largest hospitality operations in Irish sport.
As official catering, hospitality and food services provider for the championship, Aramark oversaw the complete food and beverage programme across the event, including hospitality catering, public food villages, venue bars, media catering, staff dining and catering for security and event support teams.
Planning began in January
While visitors experienced a seamless hospitality offering throughout championship week, the scale of the operation is vast. Planning began in January, with detailed operational work underway since March. Temporary kitchens and catering infrastructure were constructed on site to support what was effectively a pop-up hospitality village serving tens of thousands of people over the course of the tournament.
Set against the dramatic backdrop of Doonbeg’s links landscape, delivering fresh food at championship scale presents unique logistical challenges. Ingredients, equipment and supplies must be transported, stored and prepared across a large outdoor venue while maintaining the quality, freshness and consistency expected at one of the DP World Tour’s flagship events.
Leading the culinary operation was Rúairà Boyce, Executive Chef at Aramark Ireland and Head Chef for the Irish Open.
“Most people experience the hospitality areas and food outlets operating seamlessly throughout the week, but behind that success was months of preparation and an extraordinary team effort,” said Boyce.
“We effectively built a temporary structure and hospitality operation from the ground up, serving thousands of meals every day in a challenging outdoor environment. From ensuring fresh ingredients arrived on site to maintaining the highest standards of quality and service, every detail mattered. We’re incredibly proud that guests across the hospitality suites, media centre, volunteer’s canteen and public food villages enjoyed a first-class experience throughout the championship.”
Showcasing Irish food producers and suppliers

At the heart of the operation is the commitment to showcasing Irish food producers and suppliers. Menus were designed around locally sourced ingredients from across the country, with a particular emphasis on producers from Munster, including Clare, Limerick and Cork.
Fresh seafood, artisan cheeses, premium Irish meats, dairy products and seasonal vegetables featured across the championship’s hospitality and public dining menus, giving visitors the opportunity to experience the quality and diversity of Irish produce alongside world-class golf.
Visitors also enjoyed Soul Fish, Aramark’ Irish-inspired dining concept, in addition to a wide range of popular street food and grab-and-go options throughout the venue.
For Aramark, the Irish Open offers a unique opportunity to celebrate the strength of Ireland’s food sector before an international audience.

We are incredibly proud to have worked with suppliers from across the country, particularly across Munster, to create menus that highlighted the very best of Irish produce and helped tell the story of Ireland’s outstanding food industry.”
Sustainability a key focus
Sustainability remained a key focus throughout the tournament. Compostable and biodegradable takeaway packaging was used across public food villages, while hospitality areas incorporated reusable crockery, glassware and service ware wherever possible. Food waste reduction measures and responsible sourcing practices were also embedded throughout the operation.
From sourcing local ingredients and constructing temporary kitchens to serving tens of thousands of visitors during championship week, Aramark’s Irish Open operation highlighted the scale, planning and teamwork required to deliver world-class hospitality at one of Ireland’s premier sporting events.
