To mark its two decades, the hotel is introducing a new Irish mythology themed cocktail menu, a new dining menu and a Platinum Chapter Stay. 

The Carlton Hotel Dublin Airport, an independently Irish owned four-star hotel overlooking Dublin Airport, celebrates its 20th anniversary this year. To mark its two decades, the hotel is introducing a new Irish mythology themed cocktail menu and a new dining menu in Runway 28 Rooftop Bar and Restaurant, along with launching a Platinum Chapter Stay. 

Irish Mythology Meets Modern Mixology at Runway 28

At Runway 28 Rooftop Bar and Restaurant guests can enjoy exclusive front-row seats to Dublin Airport’s busiest runway while enjoying the new cocktail menu, which is themed around Irish mythology and folklore. Titled ‘Essentials of Drinking Etiquette’, the cocktail menu is a storybook of Irish legends reimagined through drinks.

Each cocktail has been created using Irish whiskeys and spirits, complete with guidance on the correct time to enjoy the cocktail by following the clock etiquette! New cocktails include Sióga (fairies) with Bulleit Bourbon, Guinness syrup, orange and Angostura bitters for those love an aromatic bittersweet cocktail, and Ealaí (swans) with Roe & Co Irish Whiskey, espresso, caramel, coconut syrup, Frangelico liqueur and orange bitters, which is best enjoyed after dinner.

Boasting a selection of rare and limited-edition Irish whiskeys, connoisseurs can enjoy a collector’s pour at Runway 28 guided by sommelier and expert, Davorin Halacek, and bar manager Higor Franjotti

A Celebration of Irish Ingredients and Local Producers

The new dining menu at Runway 28 Rooftop Bar and Restaurant includes flavourful dishes using the finest locally sourced ingredients in a relaxed, stylish space.

The menu offers West Cork black pudding with Pink Lady apple and Irish apple cream, a Fisherman’s Soup with fresh fish from Wrights of Howth, in a tomato and smoked pepper broth, and St. Tola Goats Cheese mousse served with sliced beetroot and walnuts to start. Main courses include aged beef steaks from McLoughlin’s Craft Butchers, woodfire pizzas with Dingle whiskey infused salami and St. Tola’s cheese, slow cooked Wicklow lamb shoulder, and potato gnocchi with spring vegetables and the renowned Irish hard sheep’s milk cheese, Cais na Tire.

Head chef, Cian O’Leary, has created the new menu to celebrate Irish ingredients and the trusted local suppliers behind them, reflecting a strong sense of place and a true nod to Irish produce.
