Following a long and rewarding development journey, the brand proudly introduces its premium 5-year-old and 12-year-old expressions, now available across all Doherty Hospitality venues, McGrory’s Culdaff, The Eagle Glasthule, and The Queens Dalkey.
The stewardship of Doherty Irish Whiskey is overseen by COO Udo Wittmann, whose expertise has guided the whiskey from vision to reality. A special acknowledgement also goes to Paddy, supported throughout by his wife Orla, and daughters Ursula and Jenny, whose dedication has been central to the project.

The launch event was hosted by Eddy McCole, General Manager of The Eagle, who served as MC for the evening. The celebration was attended by Donegal Man of the Year, John McCarter, whose presence added to the sense of local pride and heritage at the heart of the brand.
Guests also enjoyed evocative visual storytelling from Biddy McLaughlin, whose work captures the rugged beauty of Donegal and reflects the brand message: A Different Spirit.


A Taste of Donegal
Guests experienced a curated tasting menu designed to complement both whiskey expressions. Highlights included fresh crab with Atlantic herbs paired with the Doherty 5 Year Old, chargrilled Irish beef with a whiskey-peppercorn glaze paired with the 12 Year Old, and a rich chocolate and barrel-smoke dessert served alongside the 12 Year Old neat.
