Dublin Chef Jake Gamboa to Represent Ireland at Aramark International Culinary Competition in Shanghai

Dublin chef Jake Gamboa is flying to Shanghai this week to represent Ireland at the prestigious Aramark International Chefs Cup

Competing against top culinary talent from around the world, Jake, recently crowned Aramark Ireland Chef of the Year 2025, will showcase the finest Irish produce combined with vibrant Filipino flavours on the global culinary stage.

Jake, a proud Filipino-Irish chef who grew up in Leopardstown, brings a unique fusion of cultural influences to his cooking. Inspired by childhood memories of his family’s Filipino home cooking and his experience working in some of Dublin’s top kitchens, including the renowned Michelin-starred Chapter One, Gamboa’s cooking reflects both his heritage and his Dublin roots.

“It’s truly an honour to represent Aramark Ireland and showcase Irish produce through the lens of Filipino cuisine,” says Gamboa. “I never imagined myself competing in a culinary competition, and I’m incredibly grateful to my mentor, David Joyce, for encouraging me to take this leap.” says Gamboa

The competition, open exclusively to Aramark Corporate Catering chefs, takes place over two days. On day one, Gamboa will create a menu from a mystery basket of ingredients, requiring creativity, speed, and precision. He’s been training rigorously in preparation to ensure every dish meets the highest standards.

“Constant repetition and preparation are key. I want to be ready to execute everything flawlessly when I arrive in Shanghai,” he adds. “I’m hoping to remain present throughout so that I can really appreciate the opportunity,” says Gamboa. “It’s not every day you get to do something like this. I want to honour the work I’ve put in and not take any of it for granted.”

The journey into the culinary world began at a young age for Gamboa, he recalls being a Transition Year student in Oatlands College, Mount Merrion when his curiosity for cooking was ignited. He was drawn in by the creativity of cooking shows and was inspired by his father’s passion.

“My dad showed me that cooking is a passion, not a chore. And over the years, every chef I’ve worked with has shaped my perspective and skills – especially David Joyce, who has given me the confidence to explore and create.”

While many dishes hold special meaning, it’s those with Filipino roots that resonate with Gamboa the most. Gamboa’s childhood spent growing up in Leopardstown also greatly influences his cooking. “Both Ireland and the Philippines have such rich food cultures, I am lucky that I have the opportunity to use the best fresh, seasonal Irish produce and create meals with a Filipino twist. Filipino cuisine is still emerging on the global stage. I’d love to be part of the wave of chefs helping it reach a wider audience.”
