Executive Chef at Mulranny Park Hotel Celebrates a Record 16 years at the Iconic Property!

Chamila Manawatta is delighted to celebrate his 16th year at the Mulranny Park Hotel which includes the famous 2AA award winning Nephin Restaurant.

At the age of 20 in 2007, Chamila Manawatta joined the four-star Mulranny Park Hotel as a Senior Chef De Partie and steadily worked his way up to Executive Chef, a position he holds since 2015.

Chef Chamila, a native Sri Lankan leads the hotels’ culinary team of 15 staff in Nephin Restaurant, the Waterfront Bar and Bistro, as well as banquet culinary operations at the hotel. Before moving to Mayo in 2007, he worked with esteemed hotel chains such as Hilton, Intercontinental, Sheraton & Taj Samudra, which have all contributed to his cooking style. He has studied at Slihmi Hotel Management School in Clombo as well as holding a BA Degree in Culinary Arts Galway.

Chamila and his team create unique dishes that showcase the best of West of Ireland produce, with classic French and modern cooking methods, with a hint of his Sri Lankan heritage. Chef Chamilla trained in classical French and Italian culinary.

Chamila said, “Every day I am excited to be given the opportunity to lead the entire culinary team at the Mulranny Park Hotel. There is plenty of scope with the amazing local ingredients that I am fortunate to have at my fingertips to curate interesting epicurean experiences for our diners. My goal is always to groom and lead my team into establishing a firm foothold for our hotel in the West of Ireland. “

Nephin Restaurant at the Mulranny Park Hotel’s fine dining restaurant is where you can experience the very best of Chamila’s superb blend of flavours. Chamila works with his suppliers such as Keen Bay Smoke House in Achill where the hotels salmon and mackerel are smoked. Gerry Hassett (from Keen Bay Smoke House) also smokes celeriac and other vegetables to add unique flavours to the Nephin Restaurant dishes.

But it’s not all fine dining at the hotel! Chamila has introduced a Curry Corner in the Waterfront Bar to offer an authentic “Taste of Sri Lankan Red Curry”, and also has a “Summer BBQ Series” launching in June with some more fantastic flavours for the Summer. Also this summer he will offering a themed “Family Dining Hour”, for the hotel’s younger guests to enjoy.

Chamila is a key driver of Mayo’s Gourmet Greenway and self-guided tour of producers and venues that showcase the best produce located along the Great Western Greenway. Chamila Hosts a showcase dinner every year in the Autumn, launching a Gourmet Greenway Events Guide which introduces new members and produce.
