Fota Island Resort is delighted to announce the appointment of Tomasz Pawlak as Executive Head Chef
Originally from Poland, Tomasz graduated with a degree in Culinary Art and Fine Dining from The Karol Libelt Gastronomic School and The Poznan Academy of Fine Dining in 2001. After graduating, Tomasz worked at the Mercure hotel in Poznan, where he was given the opportunity to cook for notable guests such as the President of Poland.
Tomasz moved to Ireland in 2007 and started his Irish culinary career at the Michelin starred Aniar restaurant. He then joined Killarney’s world-renowned Europe Hotel where he quickly progressed to the role of Head Chef.
After joining Fota Island Resort as Head Chef in 2018, Tomasz quickly proved himself to be a valued member of the team and is very popular among his colleagues. Tomasz’s creativity and passion for food is evident in every dish and he takes great pride in going the extra mile for his customers.
Tomasz will be responsible for all culinary aspects of Fota Island Resort including its array of dining options at The Amber Restaurant, The exclusive Cove Restaurant and the more casual The Clubhouse. Each menu is carefully crafted to showcase the kitchen team’s exceptional skills and the local area’s fantastic produce, whether that be fresh seafood from Ballycotton, delicious local cheeses or organic produce from the many nearby farms.
