Portmarnock Hotel & Golf Links Welcomes New Executive Chef Tommy Butler

We are delighted to welcome our new Executive Chef, Tommy Butler to Portmarnock Hotel & Golf Links. As Executive Head Chef, Tommy will oversee operations across all dining venues, meetings and events in our resort.

Originally from Cork, Tommy has more than 18 years’ experience working in the hospitality industry across Ireland, France, where he worked in Michelin- starred restaurants and Australia, where he discovered his love for fusion food.

Before joining the team at Portmarnock, Tommy most recently held the position of Executive Chef at Farnham Estate Golf & Spa Resort.

Ahead of that role, Tommy was the Executive Head Chef of Radisson Blu Royal Hotel Dublin which saw him oversee the launch of the hotel‘s new restaurant, the Chancery Grill, as well as the Dyflin Bar and the Dyflin Garden. Tommy has also previously appeared on TV Show, Ireland AM, where he has guided viewers through some of his favourite at home recipes.

In this position, Tommy has already revamped our historic Jameson Bar menus, as well as reintroducing lunch to our beautiful Seaview Lounge.

Outside of work, Tommy enjoys training karate, a discipline he has trained in for the last 25 years.

Tommy said: “I am delighted to be taking on the role of Executive Head Chef at Portmarnock Hotel & Golf Links. Having previously work in four star resorts over the last 15 years, I am looking forward to creating a new dining experience for guests and visitors alike.”
