The K Club is delighted to announce the appointment of Philip Brazil to the role of Executive Chef at this prestigious five-star resort.
Philip Brazil is an experienced and skilled chef and manager with a significant track record of success in the catering industry throughout Ireland and abroad.
Since graduating from the College of Catering, Cathal Brugha Street in 1991, Philip has worked consistently at a high level in the hospitality business, beginning after graduation as Commis Chef at Gidleigh Park Hotel, the five-star property in Devon, a Relais & Chateaux hotel, where he worked for just over two years.
Philip followed this with three years as Sous Chef at four-star Tinakilly Country House Hotel in Wicklow, five years at The Clarence Hotel in Dublin as Sous Chef, and two and a half years at Knockranny House Hotel in Westport as Head Chef. In November 2003, Philip took up the role of Senior Sous Chef at the renowned Roly’s Bistro in Dublin, followed by a period as Head Chef in Cork’s Clarion Hotel, and then five years as Executive Chef at five-star Sheen Falls Lodge.
In January 2011 Philip moved to five-star Fota Island Resort as Executive Head Chef, and then to Aghadoe Heights Hotel in a similar role, followed by a further four years at Sheen Falls Lodge as Executive Chef.
A frequent award-winner, since 2008 Philip has also completed a Bachelor of Arts in Culinary Arts and a Masters in Culinary Arts Management while working full-time in the industry. Philip joins The K Club from Castle Leslie Estate where he has been Executive Head Chef since January 2018.
Highly creative, organised and adaptable, Philip brings his vast wealth of experience in both casual and fine dining settings as well as banqueting and events to The K Club’s food and beverage programme across all the resort’s various outlets, from The Barton and The River Room Restaurants to The K Thai, Legends at the Arnold Palmer Clubhouse, The Henry Lounge, Blue Martini Cocktail Bar and The Straffan Inn. The culinary team at The K Club looks forward to developing and enhancing the resort’s offerings under his leadership.
