More than 1,000 Aramark colleagues worked across Croke Park Stadium on the night
Aramark Ireland showcased its expertise in delivering world-class hospitality at scale, providing food, beverage and hospitality services to more than 83,000 fans at Katie Taylor’s historic farewell fight in Croke Park.
The sold-out event marked the first boxing match at the iconic stadium in more than five decades and one of the most significant nights in Irish sporting history. As thousands gathered to celebrate the career of Ireland’s most decorated boxer, Aramark’s teams worked behind the scenes to deliver an exceptional guest experience across every area of the stadium.
As this was Croke Park’s first boxing event in more than 50 years, there was limited historical data available on audience food and beverage preferences. Aramark therefore created a hospitality offering designed to reflect the unique nature of the occasion while maintaining the premium dining standards expected by hospitality guests. Distinct from traditional All-Ireland Final hospitality, the hospitality suite menu featured an Irish seafood platter including grilled salmon, Bailey & Kish smoked salmon and gamba prawns, followed by prime Irish beef bourguignon, with medallions of beef fillet served in a rich traditional Burgundy sauce. This approach ensured guests enjoyed a premium dining experience tailored to the event.
The Irish Punch Dessert,
Menus were developed using quality, locally sourced ingredients wherever possible and designed to reflect the significance of the occasion. Specially developed menu items included The Irish Punch Dessert, created exclusively for the event. Incorporating the colours of the Irish tricolour through layers of orange mousse, white chocolate and matcha sponge, the dessert provided a subtle tribute to Ireland’s most celebrated boxing champion.
13 months of planning and preparation
Delivering an event of this scale required meticulous planning and operational excellence. More than 1,000 Aramark colleagues worked across the stadium on the night, supported by 13 months of planning and preparation. Across hospitality suites, concessions and retail outlets, Aramark served tens of thousands of guests in just a few hours while maintaining exceptional standards of quality and service.

The Katie Taylor farewell capped a landmark summer for Aramark at Croke Park, during which the company delivered hospitality and catering services for major concerts, international rugby fixtures, All-Ireland Championship Finals and a historic boxing event. To support one of the busiest event schedules in recent years, Aramark recruited and trained more than 500 seasonal team members, helping maintain exceptional service standards across every event.
