Ashford Castle appoints long-serving team member Nicolas Heneghan as head sommelier

Ashford Castle has appointed one of its longest-serving team members as Head Sommelier, marking a significant milestone in Nicholas Heneghan’s 28-year career at the five-star luxury hotel.

Mayo native Nicolas joined Ashford Castle in 1998 and spent his first six years in food and beverage service as Chef de Rang, while also working across room and lounge service. He transitioned to the castle’s renowned sommelier team 22 years ago, steadily progressing through the ranks. For more than 11 years he served as assistant head sommelier before taking on the role of head sommelier.

A key figure in the development of Ashford Castle’s world-class wine programme, Nicholas led the move to the estate’s new wine cellars in 2015, where he curated and organised the collection. Since then, he has overseen the management, purchasing and stocking of the cellar, ensuring an outstanding selection of more than 600 wines for guests.

Throughout his career Nicholas has mentored and trained numerous sommeliers, many of whom have gone on to successful careers in leading hospitality establishments internationally. He has also continued to expand his own expertise through WSET training and specialist masterclasses covering renowned wine regions including Bordeaux, Mosel and Champagne.

Nicholas believes that hands-on experience is the foundation of becoming an exceptional sommelier. “Working with producers, tasting wines and serving guests in a world-class environment like Ashford Castle is an invaluable education,” he says.

Ashford Castle’s 16th Century wine cellars, secret passageways that were only unearthed during renovations, were originally used as the servants’ entrance, a coal bunker and underground walkway. The cellars have been lovingly transformed and now provide private spaces where guests can enjoy wine tasting from the Castle’s expansive wine list along with special dining experiences.

Ashford Castle is the only property in the UK and Ireland to hold a five-star Forbes Travel Guide rating for both its hotel and spa.
