Kevin will help define the next chapter of Dromoland Castle’s culinary story

The team at Dromoland Castle, County Clare welcomes Kevin Fleming as Resort Executive Chef.

In his new role, Kevin will shape and guide the culinary vision across the iconic estate, curating a distinctive gastronomic journey that reflects the character, heritage and sense of place synonymous with Dromoland Castle. 

His remit spans the castle’s celebrated collection of dining experiences, including the award-winning Earl of Thomond Restaurant, the renowned Afternoon Tea offering, the Fig Tree Restaurant at the golf clubhouse, The Cocktail Bar, and the estate’s sister property, The Rine. 

Working closely with teams across the resort, Kevin will help define the next chapter of Dromoland Castle’s culinary story, elevating every dining touchpoint and further enriching the exceptional guest experience for which the estate is renowned.  2027 will see a thoughtful evolution of Dromoland Castle with a significant development plan where culinary experiences will play a pivotal role.

A Distinguished International Culinary Career

An Irish hospitality leader with more than two decades of international experience, Kevin joins Dromoland Castle from the prestigious Fairmont Golden Prague, where he served as Culinary Director, leading the luxury hotel’s highly anticipated relaunch.

Kevin’s distinguished career has taken him across some of the world’s most acclaimed luxury hospitality destinations. At Atlantis The Palm in Dubai, he directed large-scale culinary operations across a portfolio that included globally renowned dining brands such as Nobu and Hakkasan, while also delivering major events catering for up to 4,000 guests. He later served as Executive Chef at Sofitel Dubai The Palm, where he managed 14 outlets and up to 160 chefs, earning recognition for his operational excellence, sustainability leadership, and place on the Hotelier Middle East Executive Chef Power List.

His career has also included senior culinary roles in Abu Dhabi’s luxury dining scene, working under acclaimed Michelin-starred chef Michael Caines and helping to launch and lead several award-winning restaurant concepts. 

Closer to home, Kevin was part of the leadership team behind the landmark redevelopment and reopening of Adare Manor, playing a key role in establishing the culinary foundations for the award-winning property.

Commenting about his appointment, Kevin said
