In 2024 Glas Restaurant in Dublin became Ireland’s first fully gluten-free fine dining restaurant. With no wheat, barley, or rye handled in the kitchen, every dish on the menu is completely free of gluten, marking a significant development in the Irish dining scene and a haven for coeliac and gluten-intolerant diners
