Adam Nevin returns from London to take over as Head Chef of The Morrison Room in Carton House a Fairmont Managed Hotel Maynooth Co. Kildare

The Morrison Room in Maynooth Co. Kildare will welcome Adam Nevin as Head Chef this September.

Originally from Maynooth in County Kildare, Adam has worked in hospitality from a young age and trained at Ballymaloe Cookery School before working at The Shelbourne in Dublin. In 2017 Adam moved to the UK, joining Alyn Williams restaurant at The Westbury in London as Chef de Partie where he worked for 18 months, before joining Tom Kerridge’s team at the two Michelin starred Pub, The Hand and Flowers.

Following this Adam moved to the famous Dorchester in London in 2019 to The Grill at The Dorchester first as Sous Chef, thereafter he was quickly promoted, finally to Head Chef in November 2022.

Adam is excited to return to Ireland and to his hometown of Maynooth to take up the position of Head Chef of The Morrison Room at Fairmont Carton House. A spectacular dining room, when added to The Michelin Guide earlier this year, The Morrison Room description read “We all need a little glamour in our lives, and this restaurant within the vast, luxurious Carton House resort provides it in spades. The room is gloriously showy and boldly ornate; this is certainly dressing-up time.”

General Manager of Fairmont Carton House, Martin Mangan, is excited for the next chapter of The Morrison Room: “The Morrison Room is a truly magical setting, and we really want to ensure our guests’ experience, from their welcome to their drinks and in particular their food, matches the setting. Adam is a real talent who has been impressing and turning heads across the pond and we’re delighted that he’s coming home to Maynooth to join our super team in The Morrison Room.”

Carton House, A Fairmont Managed Hotel, reopened in June 2021 after a two-year, multimillion-euro renovation and reimagining of the original house, surrounding hotel and stunning grounds and parkland. The refurbishment put the spectacular Palladian-style mansion, The Manor House, at the heart of the guest experience, with the particularly special addition of The Morrison Room, a spectacular room which has been transformed into the resort’s fine dining restaurant and morning breakfast room.
