The Heritage in Killenard appoint Tom Comerford as Executive Head Chef
The Heritage in Killenard have appointed Tom Comerford as Executive Head Chef. Tom has enjoyed a fantastic career to date, most recently working as Executive Head Chef of the Kilkenny Ormonde Hotel since 2018, and for a year before that, in the Hibernian Hotel in Kilkenny.
Prior to this he spent some years training under top Chefs in Britain to gain invaluable experience, working in three Michelin starred Aiain Ducasse at The Dorchester in London, two Michelin starred L’Enclume by Simon Rogan, and with Daniel Clifford at the two Michelin starred midsummer house in Cambridge.
Tom is continuously seeking to learn more about his trade, and during his career has made a point of working with other great chefs including Pierre Koffmann at the three Michelin star La Tante Claire in London and John Burton-Race at the two Michelin starred Landmark Hotel in London.
Tom has also spent time working as a Consultant / Head Chef for businesses that needed help and advice, turning many businesses around, redesigning menus and the food concept of each property.
Tom trained in cookery at the London Institute, and early in his career, from 2003 to 2006, he was awarded 3 AA Rosettes as Resort Head Chef for Brocket Hall.

We love to work with local, seasonal produce and Thomas is fantastic at selecting the best local ingredients and making them shine on a plate.”
Tom is married to Luiza with two young daughters. His job really is his passion and even when not working in the kitchen, you’ll find him foraging for wild herbs or mushrooms, or collecting and reading cookbooks.
