Second AA Rosette Awarded To Adult Only FARM Steakhouse In The Amber Springs Hotel
FARM Steakhouse in the Amber Springs Hotel is delighted to have been nominated its second AA Rosette. Owned by Tommy and Paddy Redmond, the steakhouse restaurant was opened in 2016 as the newest addition to the hotel's dining portfolio. Serving steaks from Angus cattle reared on the Amber Spring's own Redmond farm, the meat is dry aged, divine in taste, superb in quality, filled with flavour and cooked to perfection.
The 2 star AA Rosette is awarded to excellent restaurants that aim for and achieve higher standards and better consistency. A greater precision is apparent in the cooking and there is obvious attention to the selection of quality ingredients. This is especially true under the guidance of Executive Chef William Millar and FARM Steakhouse chef Tamas Varga where the dishes are seasonal, inventive and have a depth of flavour enviable to some of the top steakhouses across the world. Naturally the beef takes centre stage from grass fed Angus cattle out on the farm, minutes from the hotel. The 300 acre farm is where 500 Angus cross heifers are finished annually. Alongside the Angus herd, potatoes and vegetables are grown for use within the restaurant. All tender vegetable crops such as lettuce, tomatoes and courgettes are grown in poly-tunnels. The hotel has a full time horticulturist who nurtures growth for hotels.
General Manager of the Amber Springs, Eibhear Coyle, is very proud of the AA Rosette award. We are fortunate that our Redmond Farm was awarded a Bord Bia Origin Green Award for provenance and consistency in efficiencies in farming, while focusing on improving the sustainability across all elements from farm to hotel. We believed we needed a strong steakhouse to reflect our excellent product and we had an intimate under-utilised space of an adult only residents bar - the leap to an adult only steakhouse wasn't a difficult transition! "The key to success is to maintain consistency in our dishes, reflective of the farm produce and giving the diner a great night out. Having consulted with the AA inspector we agreed sometime ago the key is to simplify and intensify, which we have focussed on. We want to get back to the days of relaxing and enjoying a conversation while indulging in great food and wine. This is why this award is so special, it shows we are achieving that". Now with a double AA Rosette, FARM Steakhouse is set to go from strength to strength. The focus for Amber Springs Hotel now will be on achieving AA Rosette for FARINA, the Italian garden restaurant, expanding BBG Bar and grill and bedding down the new menu and layout in Kelbys, the Amber Springs restaurant.
