Sha-Roe Bistro, Clonegal, Co. Carlow Awarded Bord Bia Just Ask Restaurant of the Month

Sha-Roe Bistro in Clonegal, Co. Carlow has been awarded Just Ask Restaurant of the Month for July. Henry and Stephanie Stone's small but beautiful and atmospheric restaurant is in the pretty riverside village of Clonegal on the borders of Wexford, Carlow and Wicklow. The warm welcome and country charm exudes an impressive professionalism; Henry Stone is one of Ireland's finest chefs and he and Stephanie make a great team, allowing guests to relax in the knowledge that everything will run seamlessly.

Currently in its eighth year, the Just Ask campaign has been wholeheartedly embraced by the restaurant trade. The campaign encourages diners to look for information on where food on their plate comes from and encourages chefs to profile their local suppliers on menus. Selected by renowned food writer Georgina Campbell in collaboration with Bord Bia, the Just Ask Restaurant of the Month rewards eateries across Ireland that exhibit best practice in showing transparency in the sourcing of the food on their menus.

Sourcing and seasonality are key to everything in this kitchen and, going far beyond simply crediting valued suppliers on the menu, Henry introduces them in the context of his philosophy of food: “Aren’t seasons there for the picking? Do they not sustain the wonderful variety of food available to us? In a world where everything is available all year round, we can forget the sheer delight of tasting what nature has to offer each season. When it comes to really interesting food and cooking, seasonality is everything. Sha-Roe picks its suppliers carefully. The customers’ experience is always at the forefront of our decision making”

Gareth Kavanagh of Kavanagh Meats in Enniscorthy, Co. Wexford supply fresh meat and Tom Nolan of Croghan Valley Game in Aughrim supply deer and pheasants when in season. Fish is sourced from Colin O’Shea of Seatrade in Dunmore East, Co. Waterford and Cullen’s Wholesale in Gorey supply fruit and vegetables. Irish cheese suppliers include Elizabeth Bradley in Carlow; Gubbeen in Schull, Co. Cork; Wicklow Blue in Arklow and Leinster Cloth Cheddar from Tom Burgess in Coolattin.
